Homemade Recipes from this year's Anniversary Weekend

Crockpot Herbed Almonds

2 cups raw almonds
1/2 tsp coarse ground black pepper
1/2 tbsp salt
1 tbsp dried thyme
1 tbsp dried rosemary leaves
1 1/2 tbsp olive oil

Combine all ingredients in a 1 1/2 quart slow cooker
Cover & cook on high for 1 1/2 hours, stirring every 30 minutes
Serve warm or allow to cool

Apple Maple Pecan Salad

1/4 cup lemon juice
1/4 cup avocado oil
1/4 cup maple syrup
1 1/2 tsp Dijon mustard
1/2 tsp coarse ground black pepper
4 cups green cabbage, shredded
3 large Granny Smith apples, julienned
1/2 cup gorgonzola cheese
1 cup pecans, chopped & toasted

In a small bowl, whisk lemon juice, avocado oil, maple syrup, Dijon mustard, & pepper until blended
In a larger bowl, combine cabbage, apples, & cheese. Toss with dressing to coat
Let stand 30 minutes before serving or can be made the day before you serve

Wild Rice Chicken Salad

3 cups chicken, cooked & cubed
4 cups uncooked wild rice (12 cups cooked)
2 cups red grapes
2 1/2 cups cauliflower
2 cups broccoli
1 red onion, diced
4 cups mayonnaise
2 cups cashews
1/4 tsp salt
1/2 tsp black pepper
1/2 cup sugar
1 tbsp celery seed

Add all seasoning to mayonnaise & mix well
Combine all other ingredients & mayo
Cashews may be mixed in or sprinkled on top

Crockpot Shredded Beef

Peterson's beef shank
Dry au jus mix packet
Dry French onion soup mix packet

All ingredients into the crockpot, set to low & stir occasionally
Beef will create its own moisture, or you can add stock if desired
Shred & serve

Cinnamon Roll Cookies (Gluten Free)

Filling:

6 tbs salted butter, softened
3/4 cup packed brown sugar
1 1/2 tbs cinnamon (we used Ceylon cinnamon)

Dough:

1 cup salted butter, softened
1 2/3 cup granulated sugar
2 large eggs
2 tsp vanilla
3 1/2 cups gluten free flour (we used Bob's Red Mill all-purpose gluten free flour)
1 tsp baking soda
3/4 tsp salt
1 1/2 tbs cream of tartar

For rolling:

1/3 cup granulated sugar
1 1/2 tbs cinnamon

Make the filling first: in a large bowl, cream softened butter and add brown sugar & cinnamon.
Line a baking sheet with parchment paper & roll the filling into marble sized balls - freeze 20 minutes
Preheat oven to 350f & line more baking sheets
In the same bowl, cream dough butter until smooth
Beat in granulated sugar
Add eggs & vanilla, beat until just incorporated
Add flour, baking soda, salt, cream of tartar & gently beat together (don't overwork)
Fold in frozen filling balls
Coat cookies (about 2in balls) in cinnamon sugar mix & place on baking sheets, about 2in apart
Bake for 11-12 minutes
Cookies will still look slightly undone and oozy: the edges should be firm but not golden
Shape any escaped filling back into the cookies while still warm & let set for at least 5 minutes before transferring to a wire cooling rack

Coconut Brownies

1 package brownie mix (Ghirardelli was what we used)
11 oz butterscotch chips
2 cups sweetened shredded coconut
1 cup chopped pecans (optional)
14 oz sweetened condensed milk (1 can)

Preheat oven to 350f. Line or grease a 13x9 baking pan
Prepare brownie batter according to package directions & pour into prepared pan
Add butterscotch chips, shredded coconut, & pecans. Drizzle with condensed milk (or dump on top like we did)
Bake until topping is golden brown, 35-40 minutes
Cool & serve

Sunrise Flour Mill was created in North Branch, MN out of love and necessity. Modern wheat with its more difficult to digest gluten began causing issues for founders Darrold and Marty. Going back to basics, they discovered heritage grains could be far more simple to break down for the gluten sensitive.

Unifine Milling

A unique process, from their website: “We produce single source, organic, heritage flours using a renewed milling technology from the 1930’s called the Unifine mill. It is a single pass, high velocity impact mill. Instead of grinding the grain, the mill shatters it into very minute particles, a technology that produces a super-fine and fluffy flour. Unifine flour will help anyone create luscious lofty baked goods and achieve better baking results than are normally achieved using conventional whole wheat.”

Pizza Recipe

Submitted from a Sassafras Customer:

“I make my pizza dough in the morning and then place it in the frig to develop flavor until I'm ready for making pizza that evening.

1 teaspoons Instant Yeast (5 grams) or Less
1 teaspoons sugar
1/2 teaspoons salt
1 teaspoon Buttermilk Powder or Dry Milk Powder
1 Cup Sunrise Pizza Flour
6 Tablespoons lukewarm water (approx 100 degrees "non-chloride" water)
1 Tablespoon olive oil

Topping

San Marzano tomato's with a dash of salt & sugar or marinara sauce
freshly chopped garlic
sliced or grated mozzarella cheese, or grated or shredded Parmesan or Romano cheese
fresh basil leaves, to garnish; optional

1 - Dissolve yeast and sugar in small bowl with 1 Tbsp lukewarm water.

2 - While yeast mixture is getting active, mix dry ingredients.

3 - Add yeast mixture to dry ingredients plus the additional water and olive oil.

4 - Knead for a few minutes then place in a bowl with cling wrap on top and put in frig for several hours.

5 - When ready to make pizza, remove from frig and let dough warm up on the counter for approximately 30 minutes.

6 - Grease cast iron fry pan with olive oil. Preheat oven to 425 degrees.

7 - Form pizza crust and place in cast iron pan. Bake for 5 - 7 minutes.

8 - Remove pan and crust from oven. Sprinkle grated Parmesan cheese on crust and then San Marzano tomato's and rest of the toppings (less is more). Bake for approximately 10 -15 minutes. Ovens are different. Watch Carefully.

9 - Remove from oven. Let pizza rest 10 minutes. Then with wooden utensils remove pizza from cast iron pan onto cutting board.
